You can get a lot of design ideas at Fire Mtn Gems' website (yep, www.firemountaingems.com) whether you buy your stuff from them or not.
I'd suggest pearls, if you want to go fancy. Take some 6mm or 8mm glass pearls. String them with 5mm x 3mm crystal rondelles as spacers in between or with tiny (2mm to 3mm) silver round spacers and rondelles. You always want some kind of smallish spacer so the round beads will lay better. One of my favorite pearl stringing "patterns" is tiny silver spacer, glass pearl, clear crystal rondelle, glass pearl, tiny silver spacer. Repeat that all the way around.
If you have difficulty with clasps, get necklace-sized memory wire. It makes the best chokers, no clasp needed. It may look like a Medieval instrument of torture, but is actually quite comfortable to wear. It's thin, so it goes through freshwater pearls as well as glass ones, if you decide you prefer real freshwater pearls. They're not too much more than good glass pearls.
